●       Chocolate Pralines – hard chocolate shells with soft or liquid fillings. The course will tackle how to form these shells, make the fillings, and set the chocolate.

●       Chocolate Truffles – These are chocolate ganache centres coated in chocolate, with cocoa powder, icing sugar, sometimes with chopped toasted nuts (almonds, hazelnut) often formed as a sphere, cone, or curved.
