A meat grinder is vital to the process as is a scale so that you can accurately measure how much product you have. 

Beyond that, some basic items that most sausages will require are casings, a sausage stuffer, and a thermometer. 

You can get more involved in the process. 

If you do and you wish to try some fancier sausages, there are a variety of advanced tools you might need to use. 

However, these items are sufficient for most sausages.
