Day 1: Module 1 -Duck 

You will learn about breaking down a whole duck. Then, you can use its breasts for classic French Margret de Canard and legs for duck confit. With this session, you will use all the bones to make a rich jus for the dishes. You will use the duck fat in making Lyonnaise Potatoes. 

Day 2: Module 2 – Pork

With this session, you will know how to break down a pork loin, a primal cut into chops and ribs. You can make it into Seared Pork Chops and Barbecued Ribs.

You will also understand handling and cleaning pork knuckle, seasoning, and cook it in a German Roasted Pork Knuckle style. 

Day 3: Module 3 – Beef

In Module 3, you will know bout methods in tenderizing and cooking the meats. You can use the tenderloin, the tender beef cut, to prepare the classic Beef Wellington.

You will learn how to sear a steak and understand various “doneness” levels from rare to well done. The module allows you to learn about temperature control. You can also make a sauce out of the bones for the steak. Additionally, you will understand how to saute thin beef cuts and make classic Beef Stroganoff. 

Day 4: Module 4 – Lamb 

This module will learn about using two different lamb cuts, the saddle, the rack, and the shank. You will prepare a rich lamb shank stew. This session will help you understand roasting and debone the saddle and how to serve it.

You can use the bones in preparing sauce and serve alongside the saddle. You can learn about preparing a herb-crusted rack of lamb.
