The chocolate recipes covered in this session include the following:

Almond Rocher    

This recipe is a chocolate-coated mound of slivered almonds. It was coated with a caramelized sugar layer.

Chocolate Bonbons 

The chocolate is made with hard polycarbonate molds. These are mini, hard-shelled chocolates with decoration on the exterior and filled with various fillings. This procedure will fill the molds and successfully remove them to achieve a glossy shine. There are two different fillings.       

Coated and hand-molded spherical chocolate truffles  

It includes cotton ganache filling on the tempered chocolate’s outer shell.
